Sydney, Australia - Are you ready to tuck into a piece of meat so soft and tender it quite literally feels like butter melting in your mouth?
Meat and Livestock Australia, MLA, is currently investigating new technology that could add value to red meat, particularly when it comes to the tougher cuts. The plan? To create a “meat ink” that can be used with 3D printed (3DP) food technology.
How it works is that food is created, or printed, layer by layer in a process called additive manufacturing.
MLA said in news on its website one area where this could prove especially beneficial is in providing food for the elderly who would otherwise only be able to eat pureed food.
General Manager of Research Development and Innovation at MLA, Sean Starling, says by utilising 3DP technology there is an opportunity for the red meat industry to provide high protein meals for the elderly.
He says not only will the food be more tasty, it can then also presented in intricate premium shapes and sizes.
