It’s December and you can probably smell your annual leave, if you’re not on leave already. Here’s a great recipe for entertaining family and friends…
Sweet & Sour Lamb Rib Chops
Ingredients:
6-8 lamb rib chops
2Tbsp butter
60ml balsamic vinegar
3Tbsp honey
2 cloves garlic, crushed
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried thyme
1 pinch crushed red pepper flakes
Salt
Pepper
Method:
1.Combine the balsamic vinegar, honey, garlic, oregano, basil thyme and red pepper flakes in a small pot over medium heat. Season with salt and pepper.
2.Bring to boil, reduce heat and simmer until the sauce has thickened.
3.Season rib chops with salt and pepper.
4.In a heavy based pan, melt the butter and add the lamb chops. Seal both sides until golden brown. You may transfer the chops to a griddle or leave them in the pan.
5.Pour the sweet and sour glaze over the pork chops making sure to cover them completely. Grill for a further 2 minutes turning them half way.
6.Serve immediately.
