Sam Gates is a mom, author and keen cook. She loves getting the whole family involved in the kitchen and shares one of her much loved recipes with us. Making a breakfast wrap sounds delicious and as Sam explains it is really simple to make – get the kids ready for a fun, easy to make breakfast. Here is the full recipe for her “Broodsters Breakfast Wrap”, listen to her tips to make sure you get it just right! 
 
 
 
Broodsters avo, egg, sweet chilli and cheese breakfast wrap
 
Wraps are unbeatable for those who hate
crusts or, more importantly, for those needy mornings when you crave taste and texture but have to rely on something else to hold it all together. Wraps may look like orderly, tidy parcels, but cut through the velvety folds and you’ll
find a satisfyingly mad jumble of your favourite foods within. Let’s face it,
at breakfast, who knows what the day will bring, so it makes sense to grab
everything you might need and roll it all up in one package.
 
Wraps need to be strong enough to take everything you’re going to throw at them, yet soft and pliable enough to envelop bulky contents without breaking, so use big, dinner plate-sized wraps rather than roti-style ones which don’t bend well. Wrap rolling is an art form which takes practice, but follow my instructions and you’ll soon be turning out these tight little bundles of joy.
 
In this vegetarian beauty, avocado mash creates a cool base for chilli, cheese and other goodies piled high to make one enormous wrap. It will feed two if you’re unlucky enough to have to share, otherwise it makes a mega treat just for you if no one’s looking.
 
1 egg
5 ml (1 tsp) butter
1 large white wrap, the biggest you can
find
½ripe avocado, gently mashed
60 ml (4 Tbsp) grated mature Cheddar cheese
1 tomato, diced
Small handful of rocket, chopped, plus a
few leaves for serving
15 ml (1 Tbsp) sweet chilli sauce
Salt and freshly ground black pepper
 
Whisk the egg in a bowl. Gently melt the
butter in a small pan. Add the egg and cook until loosely scrambled and not too dry. Set aside.
 
Lay out the wrap and dollop the mashed avocado in a horizontal rectangle on the lower half. Using the back of a spoon, smooth it out, leaving a clear
3–5 cm margin from the edges. Place the scrambled egg on top of the avocado, and sprinkle over the grated cheese, diced tomato and chopped rocket. Drizzle over the sweet chilli sauce in zigzag lines and season.
 
Fold in the two sides of the wrap, until they almost touch, but not quite. With the sides folded, start rolling the wrap up from the bottom. Use your thumbs to bring up the bottom of the wrap and carefully roll it over the filling and folded sides. Tuck in the corners as you go and press the sides in, creasing the whole package tightly as you roll. You will end up with a neat, tightly wrapped parcel. If you like your cheese melted, pop the parcel into the microwave for 30 seconds at this point. Set on a plate with the seam underneath, carefully cut in half and serve with the two cut sides balanced on top of each other and a few extra rocket leaves sprinkled on the top.
