Ilse Cooks the Books: Three ups with smoked salmon, avo, cream cheese and fried capers─── 10:22 Tue, 15 Jan 2019
I absolutely love eggs.
In fact, I’ve never met an egg dish I didn’t like – whether it’s plain boiled sprinkled with salt and pepper, poached on top of some wilted spinach and an English muffin and drizzled with Hollandaise sauce, in an omelette with lots of cheese or even just baked on a slice of toast. I love it all. No wonder there is special day to celebrate the humble egg! World Egg Day is celebrated every second Friday in October.
Of course, they’re also crazy good for you (info supplied by thinkegg.com):
- Eggs contain the highest quality protein you can buy;
- Egg yolks are one of the few foods that are a naturally good source of Vitamin D;
- Eggs have been described by nutritionists as nature’s large vitamin pill – packed with vitamins and minerals essential for a healthy diet, including choline, iodine, folic acid, selenium, Vitamin A, Vitamin B12, Vitamin B5 and Vitamin E, to name a few.
Good thing then that today’s recipe contains a whopping three eggs per portion. Eggy heaven!
MORE LIFE’S A BEACH COTTAGE – THREE UPS WITH
SMOKED SALMON, AVO, CREAM CHEESE AND FRIED CAPERS
In his book More Life’s a Beach Cottage, Neil Roake gives four recipes for what he calls “three ups”. That’s basically three baked eggs in a little pan, with some delicious toppings. These include salami and pineapple aioli; ham, mushroom and smoked butter; and caramelised onion, brie and tomato butter. I chose the smoked salmon, avocado, whipped cream cheese and fried capers. There are no measurements given, as it really depends on the number of people you are cooking for. As a rough guideline, I would suggest the following per portion:
3 eggs
A tablespoon of capers,
A third to half of an avocado
2 tablespoons of plain cream cheese
2 to 3 ribbons of smoked salmon
Some sliced spring onion to garnish
Fry the capers in oil until they are nice and crispy. Whip the cream cheese with a drop or two of milk to allow you to make a cheffy quenelle shape. I also stirred in a few slices of spring onion, salt and pepper into the cream cheese. Break three eggs into a small pan and bake to your liking (soft, medium or hard). Slide the eggs onto a plate (keeping the whole thing whole) and top with the capers, avocado, whipped cream cheese and salmon ribbons. Garnish with spring onion or watercress.
