Muffins are fantastic as snacks or quick breakfast options.

Karoo Style Spinach & Feta Muffins (Perfect for padkos)


Ingredients:


500ml Flour
15ml Baking Powder
250gr Spinach (Cooked & Chopped)
125gr Feta Cheese (Cubed)
45 ml Chopped Peppadews
250ml Grated Cheddar Cheese
1 Large Egg
250ml Buttermilk
125ml Oil

Method:

Sift the flour and baking powder into a mixing bowl.

Combine Egg, Buttermilk, Oil, Cheeses, Spinach and peppadew and add to the Dry ingredients. Fold the mixture together, taking care not to over mix.

Spoon mixture into your muffin tin and bake at 180 degrees celsius for around 25 mins. Makes 6 mega or 12 standard muffins.

Serve these muffins hot out of the oven, with herbed butter to give them a bit of a karoo twist! Standard size muffins are great as mid-morning or mid-afternoon snacks, whereas the Mega muffins are great as a breakfast on-the-go!
