Owners of Seisoen Restaurant gives a quick and easy way to prepare Avocado Soup in under 30 minutes.










Ingredients:

25 ml Butter

50 ml Flour

375 ml Hot Chicken Stock

375 ml Warmed Milk

Salt & Pepper

1 Very Large or 2 Medium Ripe Avocados

10 ml Lemon Juice

1 Small Spring Onion Chopped

Pinch Sugar

Crispy Bacon Bits to Garnish

Method:

Melt butter in saucepan, stir in flour and when absorbed remove from stove and slowly stir in stock and milk.

Return to stove and stir until thick and smooth.

Use a wire whisk to avoid lumps.

Season with salt and pepper and remove.

Mashed peeled avo’s with lemon juice, add sugar with spring onion and sugar.

Pour into blender and puree until smooth.

Add avo pulp and stir.  Do not let the soup boil or even bubble.

Keep the avocado stone in the soup to preserve the colour of the soup.


Easy Flatbread

Ingredients:

2 cups unsifted all purpose flour

½ teaspoon salt

50 g butter

185 ml milk

½ tablespoon oil (for cooking)

Method:

Combine butter and milk and heat until butter is melted (stove or microwave)

Combine 2 cups flour, salt with butter and milk

Sprinkle work surface with flour, then knead for a few minutes until smooth.  Add extra flour if dough is too sticky.

Dust workspace with flour cut dough into 4 pieces, roll into balls and roll out.

Heat oil in a pan and cook for around 1 – 1 ½ minutes – should bubble, then flip and cook on the other side.

You could also brush the bread with olive oil or melted butter and sprinkle with salt.
