Chef Maradine is back, this time with a recipe that has some unusual ingredients...
Cheese sauce
3 tablespoons butter
3 tablespoons flour
500 ml milk
180 g grated cheddar cheese
100g cheese and onion chips, crushed
salt and pepper to taste
Melt the butter over low heat in a saucepan. Add the flour and whisk very well for the butter and flour to form a Roux. Add the milk slowly, whisking so that no lumps form. Add all the milk. If lumps do form, use an electric stick/hand blender to make it smooth and place back on the heat to cook further. Add the cheddar cheese and whisk again, ensuring all the cheese are well incorporated. Add the crushed Chips and give another stir. Season with salt and pepper to taste.
Recipe makes about 600 ml of sauce.
Baked green beans with NikNaks
white sauce (3 cups milk, 3 tablespoons butter/margarine, 3 tablespoons cake flour mixed together)
1 kg green beans
1 onion, chopped
1 big bag of NikNaks (250 g)
250 g bacon, cut into small pieces
cheese (grated)
Mix the white sauce while boiling the green beans until soft. Grill the chopped onion and bacon pieces together in another pan. When done, mix green beans, white sauce, and bacon/onion in an oven dish, add the NikNaks and mix well. Grate enough cheese on top of the dish and place in oven at 180 degrees C until cheese has melted.
